Ingredients

  • 1 cup cornmeal
  • 1 cup buttermilk
  • 2 eggs
  • 1/2 cup bacon drippings
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 medium onion, chopped
  • 3 jalapeno peppers
  • 1/2 can cream-style corn
  • 3/4 cup cheese, cut up
  • 1/2 pound cooked ground beef (optional)

Instructions

  1. Mix all ingredients except cheese.
  2. Pour half of the batter into a greased, heated iron skillet.
  3. Sprinkle cooked ground beef and cheese over the batter.
  4. Add the remaining batter, ensuring the cheese does not touch the sides of the pan to prevent sticking.
