Ingredients

  • 2 packages frozen Fordhook lima beans
  • 2 lb fresh mushrooms
  • 5 stalks celery
  • 1/2 lb butter
  • 1 minced onion
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 2 tablespoons sifted flour
  • 1/8 teaspoon pepper
  • paprika

Instructions

  1. Cook the frozen lima beans according to package directions.
  2. Rinse the mushrooms quickly and gently pat dry with paper towels.
  3. Cut the mushroom stems even with the caps.
  4. Slice the mushrooms vertically.
  5. In a large skillet, melt the butter over medium heat.
  6. Add the minced onion and cook until translucent.
  7. Add the sliced mushrooms and cook until tender.
  8. Stir in the flour and cook for 1-2 minutes to make a roux.
  9. Gradually stir in the heavy cream, salt, nutmeg, and pepper.
  10. Add the cooked lima beans and chopped celery to the skillet.
  11. Simmer until the mixture is heated through and slightly thickened.
  12. Sprinkle with paprika before serving.
