Kauai Chicken

Ingredients

  • 2 lb. chicken pieces
  • 1 tsp. garlic salt
  • 1 tsp. paprika
  • 1/4 tsp. pepper
  • 2 Tbsp. vegetable oil
  • 1 large onion, sliced
  • 1 1/2 large green peppers, cut into thin strips
  • 1 c. diagonally sliced celery
  • 1 c. sliced mushrooms
  • 1 1/2 c. chicken broth
  • 2 Tbsp. cornstarch
  • 3 Tbsp. soy sauce
  • 2 large tomatoes, cut into eighths
  • 3 c. hot cooked rice

Instructions

  1. Remove skin and bone from chicken.
  2. Cut meat into thin strips. Season with garlic salt, paprika and pepper.
  3. Saute chicken in oil about 1 minute or until tender.
  4. Add onion, green pepper, celery, mushrooms and 1/2 cup broth.
  5. Cover and steam for 1 1/2 minutes.
  6. Blend remaining broth with cornstarch and soy sauce. Stir into chicken-vegetable mixture. Add tomatoes; cook and stir about 1 minute or until sauce is slightly thickened.
  7. Serve over beds of fluffy rice.
  8. Makes 6 servings.
