Ingredients
- 1/2 lb butter (2 sticks) ⓘ
- 1 cup sugar ⓘ
- 4 eggs ⓘ
- 1 (7 oz) can diced roasted green chilies ⓘ
- 1 1/4 cups creamed corn ⓘ
- 1 cup grated Cheddar cheese ⓘ
- 1 1/2 cups flour ⓘ
- 1 cup yellow cornmeal ⓘ
- 4 teaspoons baking powder ⓘ
- 1/4 teaspoon salt ⓘ
- 2 cups whole wheat flour ⓘ
- 1 teaspoon baking soda ⓘ
- 3 tablespoons light molasses or honey ⓘ
- 2 cups buttermilk
- 1 large egg ⓘ
- 3 Tbsp. light molasses or honey ⓘ
- 2 c. butter milk ⓘ
Instructions
- Preheat oven to 400°F (200°C) and grease a 9 x 5 x 3-inch loaf pan.
- In a bowl, mix together the flour, baking powder, baking soda, and salt.
- In a large mixing bowl, beat the eggs until well combined.
- Stir in buttermilk, molasses, and melted butter into the beaten eggs.
- Add the flour mixture to the wet ingredients and stir until just combined.
- Fold in the diced green chilies, creamed corn, grated cheddar cheese, and optional walnuts and raisins if using.
- Scrape the batter into the prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes or until the top is well browned and a toothpick inserted in the center comes out clean.
- Remove from oven and place the pan on a wire rack to cool slightly before serving.
