Ingredients

  • 1/2 lb butter (2 sticks)
  • 1 cup sugar
  • 4 eggs
  • 1 (7 oz) can diced roasted green chilies
  • 1 1/4 cups creamed corn
  • 1 cup grated Cheddar cheese
  • 1 1/2 cups flour
  • 1 cup yellow cornmeal
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 3 tablespoons light molasses or honey
  • 2 cups buttermilk
  • 1 large egg
  • 3 Tbsp. light molasses or honey
  • 2 c. butter milk

Instructions

  1. Preheat oven to 400°F (200°C) and grease a 9 x 5 x 3-inch loaf pan.
  2. In a bowl, mix together the flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, beat the eggs until well combined.
  4. Stir in buttermilk, molasses, and melted butter into the beaten eggs.
  5. Add the flour mixture to the wet ingredients and stir until just combined.
  6. Fold in the diced green chilies, creamed corn, grated cheddar cheese, and optional walnuts and raisins if using.
  7. Scrape the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50 to 60 minutes or until the top is well browned and a toothpick inserted in the center comes out clean.
  9. Remove from oven and place the pan on a wire rack to cool slightly before serving.
