Ingredients

  • 1 lb. ground beef
  • 3 slices bread
  • 1/2 cup milk
  • 1 egg
  • 3 tablespoons grated onion
  • 1 teaspoon salt
  • 3 tablespoons chopped parsley
  • 1/2 teaspoon pepper
  • 2 tablespoons hot shortening
  • flour
  • 2 cups tomato juice
  • 1 cup water
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1 teaspoon Worcestershire sauce

Instructions

  1. Soften bread slices in milk.
  2. Add beaten egg to the bread and milk mixture.
  3. Mix ground beef with grated onion, chopped parsley, salt, pepper, and the bread mixture.
  4. Form the mixture into 18 meatballs and roll each in flour.
  5. Brown the meatballs in hot shortening and drain.
  6. In a pot, combine tomato juice, water, chopped carrots, chopped celery, Worcestershire sauce, and salt.
  7. Add the browned meatballs to the sauce.
  8. Cover and simmer for 45 minutes.
  9. Serve hot with rice, potatoes, or noodles.
