Ingredients

  • 12 unpeeled jumbo fresh shrimp
  • 6 cups water
  • 1 medium onion, finely chopped
  • 1/2 cup finely chopped celery
  • 1/2 medium green pepper, finely chopped
  • 1/2 cup butter or margarine, melted
  • 1 pound fresh lump crabmeat, drained
  • 1 large egg, lightly beaten
  • 3/4 cup crushed saltine crackers
  • 1/2 cup mayonnaise
  • 1 tablespoon prepared mustard
  • 2 teaspoons Worcestershire sauce
  • 1/8 teaspoon ground red pepper
  • Paprika

Instructions

  1. Peel and devein the shrimp, leaving the tails intact.
  2. Cut a slit almost through the back of each shrimp with a paring knife.
  3. Open the shrimp and flatten them gently.
  4. Bring water to a boil in a large pot.
  5. Add the prepared shrimp and cook for 1 minute.
  6. Drain the shrimp and place them in a shallow pan.
  7. In a skillet, cook the onion, green pepper, and celery in 1/4 cup melted butter until tender.
  8. Mix the cooked vegetables with crabmeat, beaten egg, crushed saltine crackers, mayonnaise, mustard, Worcestershire sauce, red pepper, and 2 tablespoons melted butter.
  9. Stuff the prepared shrimp with the crab mixture.
  10. Arrange the stuffed shrimp in a baking dish, sprinkle with paprika.
  11. Bake at 375°F (190°C) for about 15 minutes or until heated through and lightly browned.
  12. Serve hot.
