Millionaire Stuffed Shrimp

Ingredients
- 12 unpeeled jumbo fresh shrimp ⓘ
- 6 cups water ⓘ
- 1 medium onion, finely chopped ⓘ
- 1/2 cup finely chopped celery ⓘ
- 1/2 medium green pepper, finely chopped ⓘ
- 1/2 cup butter or margarine, melted ⓘ
- 1 pound fresh lump crabmeat, drained ⓘ
- 1 large egg, lightly beaten
- 3/4 cup crushed saltine crackers
- 1/2 cup mayonnaise ⓘ
- 1 tablespoon prepared mustard ⓘ
- 2 teaspoons Worcestershire sauce ⓘ
- 1/8 teaspoon ground red pepper ⓘ

Instructions
- Peel and devein the shrimp, leaving the tails intact.
- Cut a slit almost through the back of each shrimp with a paring knife.
- Open the shrimp and flatten them gently.
- Bring water to a boil in a large pot.
- Add the prepared shrimp and cook for 1 minute.
- Drain the shrimp and place them in a shallow pan.
- In a skillet, cook the onion, green pepper, and celery in 1/4 cup melted butter until tender.
- Mix the cooked vegetables with crabmeat, beaten egg, crushed saltine crackers, mayonnaise, mustard, Worcestershire sauce, red pepper, and 2 tablespoons melted butter.
- Stuff the prepared shrimp with the crab mixture.
- Arrange the stuffed shrimp in a baking dish, sprinkle with paprika.
- Bake at 375°F (190°C) for about 15 minutes or until heated through and lightly browned.
- Serve hot.
