Mom'S Broccoli Quiche

Ingredients

  • 1 frozen pie crust
  • 1/4 cup grated Parmesan cheese
  • 2 cups chopped fresh broccoli
  • 1 cup shredded Swiss cheese
  • 1/4 cup chopped green onion
  • 3 eggs
  • 2/3 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt

Instructions

  1. Prick the bottom and sides of the frozen pie crust with a fork.
  2. Bake the pie crust in a 450°F oven for 5 minutes.
  3. Remove from oven and sprinkle with 2 tablespoons Parmesan cheese.
  4. Spread half of the chopped broccoli over the Parmesan cheese.
  5. Add half of the shredded Swiss cheese and half of the chopped green onions on top.
  6. Repeat with the remaining broccoli, Swiss cheese, and green onions.
  7. In a bowl, beat the eggs.
  8. Add chicken broth, heavy cream, and salt to the beaten eggs.
  9. Mix well until combined.
  10. Pour the egg mixture over the broccoli in the pie crust.
  11. Sprinkle the top with the remaining Parmesan cheese.
  12. Bake at 450°F for 10 minutes.
  13. Reduce the oven temperature to 325°F and bake for an additional 25 to 30 minutes.
  14. Check the quiche doneness by inserting a butter knife in the center.
