Ingredients

  • 2 oz. chopped Spanish peanuts
  • 1 (No. 303) can cream-style corn
  • 2 oz. crumbled bacon
  • 2 jalapeno peppers, chopped fine
  • 1 medium onion, chopped
  • 3 c. corn meal
  • 1 1/2 c. flour
  • 1 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 1 1/3 c. buttermilk
  • 1/2 c. water
  • 1/3 lb. melted butter
  • 3 eggs

Instructions

  1. Combine all ingredients in a large bowl and mix well.
  2. Divide the mixture into 36 one-ounce portions and roll into balls.
  3. Heat oil in a deep fryer or large pot to 450°F (232°C).
  4. Fry the rolls in hot oil until golden brown, about 2-3 minutes per batch.
  5. Remove from oil and drain on paper towels before serving.
