Ingredients

  • 1 large can white hominy
  • 1 large can yellow hominy
  • 1 pt. sour cream
  • 1 can Ortega chilies, chopped
  • 1/2 medium onion, grated
  • 3 strips bacon, fried and crumbled
  • 4 oz. Cheddar cheese, grated
  • 4 oz. Monterey Jack cheese, grated
  • 1/2 c. butter
  • 1 large onion, minced
  • 1 1/2 lb. mushrooms, sliced thin
  • 2 large cloves garlic, minced
  • 4 eggs
  • 1 c. milk
  • 6 slices egg bread, cubed
  • salt
  • pepper

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add the minced onion and sauté about 5 minutes until tender.
  3. Add the sliced mushrooms and minced garlic; sauté about 3 minutes.
  4. Remove the skillet from heat.
  5. In a bowl, beat the eggs and milk together.
  6. Add the cubed bread and season with salt, pepper, and a pinch of nutmeg; blend well.
  7. Stir in the mushroom mixture and gently combine.
  8. Taste and adjust seasoning if needed.
  9. Spoon the mixture into a baking dish.
  10. Bake at 350°F (175°C) for about 1 hour until set and golden.
