Ingredients
- 1 large can white hominy ⓘ
- 1 large can yellow hominy ⓘ
- 1 pt. sour cream ⓘ
- 1 can Ortega chilies, chopped ⓘ
- 1/2 medium onion, grated ⓘ
- 3 strips bacon, fried and crumbled ⓘ
- 4 oz. Cheddar cheese, grated ⓘ
- 4 oz. Monterey Jack cheese, grated ⓘ
- 1/2 c. butter ⓘ
- 1 large onion, minced ⓘ
- 1 1/2 lb. mushrooms, sliced thin ⓘ
- 2 large cloves garlic, minced ⓘ
- 4 eggs ⓘ
- 1 c. milk ⓘ
- 6 slices egg bread, cubed ⓘ
- salt ⓘ
- pepper ⓘ
Instructions
- Melt butter in a large skillet over medium heat.
- Add the minced onion and sauté about 5 minutes until tender.
- Add the sliced mushrooms and minced garlic; sauté about 3 minutes.
- Remove the skillet from heat.
- In a bowl, beat the eggs and milk together.
- Add the cubed bread and season with salt, pepper, and a pinch of nutmeg; blend well.
- Stir in the mushroom mixture and gently combine.
- Taste and adjust seasoning if needed.
- Spoon the mixture into a baking dish.
- Bake at 350°F (175°C) for about 1 hour until set and golden.
