Ingredients

  • 1 1/2 lb yellow squash, sliced
  • 1/2 c mayonnaise
  • 1 large egg, beaten
  • 1/2 c chopped pecans
  • 1/2 c shredded Cheddar cheese
  • 1/4 c chopped onion
  • 1/4 c chopped green pepper
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/3 c fine dry bread crumbs
  • 1 Tbsp butter or margarine

Instructions

  1. Cook the sliced yellow squash in 1/2 cup boiling water for 8 to 10 minutes; then drain.
  2. Place the cooked squash in a large bowl and mash it.
  3. Stir in mayonnaise, beaten egg, chopped pecans, shredded Cheddar cheese, chopped onion, chopped green pepper, sugar, salt, and pepper.
  4. Spoon the mixture into a lightly greased 1 1/2-quart baking dish.
  5. Sprinkle the top with fine dry bread crumbs and dot with pieces of butter or margarine.
  6. Bake at 350°F for 35 to 40 minutes until golden and bubbly.
