Ingredients

  • 4 acorn squashes
  • 3 carrots, peeled and sliced
  • 1 onion, peeled and sliced
  • 2 Tbsp butter
  • 1 Tbsp flour
  • 1 tsp salt
  • 1/2 to 1 tsp pepper
  • 2 (14 1/2 oz) cans chicken broth
  • 1/2 cup sherry
  • 1/2 tsp nutmeg
  • 1/8 tsp paprika
  • dash of allspice
  • dash of red pepper
  • 1/2 cup half and half

Instructions

  1. Cut the acorn squash in half lengthwise and remove the seeds.
  2. Place the squash, cut side down, in a broiler pan and add hot water to a depth of 1 inch.
  3. Bake at 350°F for 30 minutes.
  4. Scoop out the pulp from the squash to create a serving bowl, reserving the pulp.
  5. Set aside the squash bowls.
  6. Place carrots and onion in a saucepan and cover with water.
  7. Bring to a boil, cover, reduce heat, and simmer for 15 minutes or until vegetables are tender.
  8. Drain the vegetables and combine with the reserved squash pulp and 1/3 cup water in a blender or food processor.
  9. Process for 30 seconds or until smooth.
  10. In a large Dutch oven, melt butter over low heat.
  11. Add flour, salt, and pepper, stirring until smooth.
  12. Cook for 1 minute, stirring constantly.
  13. Gradually add the pureed vegetable mixture, chicken broth, sherry, nutmeg, paprika, allspice, and red pepper; bring to a boil.
  14. Cover, reduce heat, and simmer for 1 hour, stirring occasionally.
  15. Stir in half and half and an optional 1 1/2 tablespoons sherry.
  16. Cook until the soup is heated through but do not boil.
  17. Serve the soup in the roasted squash shells on a bed of kale.
  18. Sprinkle with paprika before serving.
