Ingredients

  • 3/4 cup softened margarine
  • 1 1/4 cups brown sugar
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 2 cups canned pumpkin
  • 3 eggs
  • 3 1/4 cups flour
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 1/2 cups chopped nuts
  • 1/2 cup raisins

Instructions

  1. Preheat oven to 350°F (175°C). Grease two loaf pans.
  2. Beat 1/2 cup softened margarine until creamy.
  3. Add 3/4 cup brown sugar, 3/4 cup white sugar, and 1 teaspoon vanilla; beat until light and fluffy.
  4. Blend in 2 cups canned pumpkin.
  5. Add 3 eggs one at a time, beating well after each addition.
  6. In a separate bowl, mix 2 1/2 cups of flour, soda, baking powder, cinnamon, and nutmeg.
  7. Gradually stir the dry ingredients into the pumpkin mixture.
  8. Fold in 1 1/2 cups chopped nuts and raisins if using.
  9. Spoon the batter into the prepared loaf pans.
  10. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
