Ingredients

  • 2 cups flour
  • 2 1/2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 cup cooking oil
  • 2 cups sugar
  • 3 eggs
  • 1 (8 oz) can crushed pineapple in juice
  • 2 cups grated carrots
  • 1 1/3 cups flaked coconut
  • 1/2 cup chopped walnuts
  • 1 (3 oz) package cream cheese
  • 1/4 cup margarine
  • 3 cups powdered sugar
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla

Instructions

  1. Mix flour, baking soda, cinnamon, and salt in a bowl.
  2. Beat oil, sugar, and eggs thoroughly in a separate bowl.
  3. Add the flour mixture to the wet ingredients and beat until smooth.
  4. Stir in crushed pineapple, grated carrots, 1/3 cup of coconut, and chopped walnuts.
  5. Pour the batter into a greased 9 x 13-inch pan.
  6. Bake at 350°F (175°C) for 50 to 60 minutes.
  7. Cool the cake for 10 minutes, then remove from the pan and cool on a wire rack.
