Ingredients

  • 1 cup yellow cornmeal
  • 1 1/3 cups cold water, divided
  • 1/4 cup plus 2 tablespoons Parmesan cheese, divided
  • 1 pound ground beef
  • 1 medium onion, sliced
  • 1 clove minced garlic
  • 1 small green pepper, sliced
  • 3/4 tablespoon basil
  • 3/4 tablespoon oregano
  • 1/8 tablespoon black pepper
  • 1 can refried or pinto beans
  • 1 cup or more shredded mozzarella cheese and/or cheddar cheese

Instructions

  1. Preheat oven to 375°F.
  2. In a small bowl, mix the cornmeal with 2/3 cup of cold water.
  3. In a small heavy saucepan, bring the remaining 2/3 cup of water to a boil.
  4. Gradually add the cornmeal mixture to the boiling water while whisking.
  5. Lower heat and continue whisking until the mixture thickens, about 3 minutes.
  6. Remove from heat and stir in 2 tablespoons of Parmesan cheese.
  7. Cook ground beef in a skillet until browned; add sliced onion, minced garlic, sliced green pepper, basil, oregano, and black pepper; cook until vegetables are tender.
  8. Spread the prepared cornmeal crust on a baking sheet or pizza pan.
  9. Spread refried or pinto beans over the crust.
  10. Layer cooked beef mixture over the beans.
  11. Top with shredded mozzarella and/or cheddar cheese.
  12. Pour tomato sauce over the cheese.
  13. Bake in the preheated oven for about 20 minutes or until cheese is bubbly and golden.
  14. Slice and serve hot.
