Ingredients

  • 1 1/2 cups small shell macaroni
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 clove garlic
  • 1/4 cup butter
  • 1 (8 oz.) can minced clams
  • 1 (8 oz.) can oysters
  • shrimp
  • cod fillets
  • 1/2 cup dry white wine
  • 1 teaspoon chicken stock base
  • 1/2 teaspoon thyme
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon pepper
  • chopped pimiento
  • bay leaf
  • flour
  • 1/3 cup cold water
  • green pepper

Instructions

  1. Cook the small shell macaroni until tender and drain.
  2. Saute chopped onion, chopped celery, and minced garlic in butter until fragrant and softened.
  3. Combine the reserved liquid from the minced clams and oysters, adding water to make 3 cups.
  4. Add the clam and oyster liquid mixture to the sautéed vegetables.
  5. Pour in the white wine, add chicken stock base, and season with thyme, nutmeg, pepper, and chopped pimiento.
  6. Add the bay leaf and simmer the mixture for 15 minutes.
  7. Stir in the cooked macaroni, chopped shrimp, oysters, and cod fillets.
  8. Mix flour with cold water to create a slurry and slowly add to the chowder to thicken.
  9. Pour in the evaporated milk and heat through without boiling.
