Ingredients

Instructions

  1. Remove skin from breast, thighs, and legs of the chicken.
  2. Rub the curry, ground cloves, and ground ginger into the meat.
  3. Let the meat rest for 30 minutes.
  4. Place leftover chicken pieces and giblets into a pot and barely cover with water.
  5. Gently poach the prepared chicken for 45 minutes.
  6. Allow the chicken to cool.
  7. Dice the cooked chicken and mix well with drained crushed pineapple, finely diced onion, diced celery, salt, and pepper.
  8. Prepare the dressing by mixing sour cream, mayonnaise, Tabasco sauce, and pineapple juice.
  9. Combine the diced chicken mixture with the dressing.
  10. When ready to serve, top the salad with chopped peanuts.
