Ingredients

  • 1/2 cup all purpose flour
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 tablespoon paprika
  • 3 to 3.5 pounds chicken, cut up
  • 1/4 cup corn oil
  • 8 oz. can whole onion, drained
  • 1/2 cup chopped carrots
  • 1 cup sliced celery
  • 1 tablespoon light brown sugar
  • 1/4 teaspoon ginger
  • 6 oz. can frozen orange juice concentrate
  • 3/4 cup water

Instructions

  1. Combine flour, salt, pepper, and paprika in a paper bag.
  2. Add chicken pieces to the bag and shake to coat evenly.
  3. Reserve 2 tablespoons of the flour mixture for gravy.
  4. Brown the coated chicken in corn oil in a skillet.
  5. Place the browned chicken in a 9x13-inch baking dish.
  6. Add drained whole onion, chopped carrots, and sliced celery over the chicken.
  7. Blend the reserved flour mixture, light brown sugar, and ginger into the pan drippings to make a smooth paste.
  8. Add the frozen orange juice concentrate and 3/4 cup water to the paste.
  9. Cook until the mixture is bubbly.
  10. Pour the orange sauce over the chicken and vegetables.
  11. Cover and bake at 350°F (175°C) for 1 1/2 hours.
