Ingredients

  • 4 eggs
  • 1 3/4 c. brown sugar
  • salt
  • 1 Tbsp. allspice
  • 1 Tbsp. cinnamon
  • 1 tsp. cardamom
  • 1 tsp. cilantro
  • 1 tsp. ginger
  • 1/2 tsp. cloves
  • 1/2 c. walnuts
  • 1/2 c. raisins
  • 1/2 c. dried apricots
  • 1 apple
  • 2 1/2 c. wheat flour

Instructions

  1. Preheat the oven to 350°.
  2. Cut the walnuts, raisins, dried apricots, and apple into pieces.
  3. In a large bowl, combine the eggs and brown sugar.
  4. Add the salt, allspice, cinnamon, cardamom, cilantro, ginger, and cloves to the mixture.
  5. Stir in the cut nuts and fruits.
  6. Gradually add the wheat flour and mix until well combined.
  7. Pour the batter into a greased cake pan and smooth the top.
  8. Bake in the preheated oven for 40 minutes or until a toothpick inserted in the center comes out clean.
