Ingredients

  • 3 cups cooked brown rice
  • 2 cups shredded mozzarella
  • 1/2 cup crunchy peanut butter
  • 1 egg
  • 3/4 cup hot water
  • 1/4 cup fresh cilantro
  • 2 tablespoons soy sauce
  • 3 tablespoons sesame oil
  • 1/4 teaspoon ground red pepper
  • 2 cups broccoli florets
  • 1 medium red onion
  • 2 large carrots

Instructions

  1. Preheat oven to 400°F.
  2. Coat a 12-inch pizza pan with non-stick spray.
  3. In a large bowl, combine cooked brown rice, 1 cup shredded mozzarella, 1/4 cup crunchy peanut butter, and beaten egg.
  4. Press the rice mixture onto the prepared pan to form a crust.
  5. Bake the crust for 8 minutes.
  6. In a separate bowl, mix remaining 1/4 cup peanut butter, hot water, chopped cilantro, soy sauce, 2 tablespoons sesame oil, and ground red pepper to make the peanut sauce.
  7. Stir fry broccoli florets, chopped red onion, and julienned carrots in 1 tablespoon sesame oil until tender crisp.
  8. Spread the peanut sauce evenly over the baked crust.
  9. Top with the stir-fried vegetables.
  10. Sprinkle the remaining shredded mozzarella cheese over the toppings.
  11. Bake the assembled pizza for an additional 10 minutes or until cheese is melted and bubbly.
