Ingredients

  • 2 medium onions, finely chopped
  • 1/4 lb. mushrooms, thinly sliced
  • 2 Tbsp. margarine
  • 4 eggs
  • 2 pkg. frozen spinach, thawed and drained
  • 1/4 cup packaged bread crumbs
  • 1 can cream of mushroom soup
  • 1/3 cup grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 tsp. basil
  • 1/4 tsp. nutmeg

Instructions

  1. Cook onions and mushrooms in butter in a large skillet until soft.
  2. Beat eggs until frothy.
  3. Stir in cooled onions and mushrooms, spinach, bread crumbs, cream of mushroom soup, 1/3 cup Parmesan cheese, salt, pepper, basil, and nutmeg until well combined.
  4. Spread the mixture in a buttered casserole dish and sprinkle with remaining cheese.
  5. Bake uncovered at 325°F (163°C) for 1 hour.
