Ingredients

  • 1/4 cup butter
  • 1 tablespoon finely chopped onion
  • 1 tablespoon finely chopped green pepper
  • 1 teaspoon finely chopped celery
  • 6 slices bread
  • 1/2 cup milk
  • 3/4 cup crab meat
  • salt and pepper
  • dash of cayenne
  • 36 large raw shrimp
  • 3 eggs
  • flour

Instructions

  1. Saute the finely chopped onion, green pepper, and celery in butter until tender.
  2. Soak the crumbled bread in milk.
  3. Combine the sauteed vegetables, soaked bread, and crab meat.
  4. Mix thoroughly and season with salt, pepper, and a dash of cayenne.
  5. Split the raw shrimp almost in half, leaving the tail on.
  6. Stuff each shrimp with the crab meat mixture and press the halves together.
  7. Dip the stuffed shrimp in seasoned flour, then in beaten eggs.
  8. Roll the shrimp in cracker meal.
  9. Deep fry in hot fat at about 375°F until golden brown.
  10. Serve hot with your preferred sauce.
