Instructions

  1. Scoop out the insides of the zucchini to leave a 1/4 to 1/2-inch rim.
  2. Chop the zucchini innards into small bits and cook in margarine with chopped onions, crushed garlic, salt, and pepper until onions are soft. Drain excess liquid.
  3. Combine the cooked mixture with flour, feta cheese, grated Swiss cheese, chopped parsley, and beaten eggs.
  4. Fry the hamburger until browned; drain excess fat and add to the vegetable and cheese mixture.
  5. Fill the zucchini shells with the mixture and dust the tops with paprika.
  6. Place the stuffed zucchinis in a 9 x 13-inch pan and bake at 375°F for 30 minutes.
