  • 1/2 c. butter

Instructions

  1. In a large bowl, combine mixed candied fruit, chopped nuts, raisins, chopped dates, dried apricots, orange juice, honey, 2 tablespoons orange liqueur, cinnamon, and mace; set aside.
  2. With an electric mixer, beat together butter and brown sugar until well blended.
  3. Beat in eggs, one at a time.
  4. Stir together flour and baking soda.
  5. Stir flour mixture into creamed mixture by hand.
  6. Add fruit mixture and stir until well distributed.
  7. Evenly spoon batter into 2 well-greased 4 1/2 x 8 1/2-inch loaf pans.
  8. Bake at 300°F (150°C) for 1 hour and 35 minutes.
  9. Cool in pans for 10 minutes.
  10. Remove from pans and cool completely.
  11. Wrap cakes in double thickness of cheesecloth saturated with 2 tablespoons orange liqueur.
  12. Overwrap in foil.
  13. Store in refrigerator for 2 weeks before sampling.
