Ingredients

  • 1/2 lb asparagus
  • 1/4 cup slivered ham or prosciutto
  • 1/4 cup butter or margarine
  • 1 thinly sliced carrot
  • 1 diced zucchini
  • 3 sliced green onions
  • 1/2 cup thawed frozen green peas
  • 1 teaspoon basil
  • 1/2 teaspoon salt
  • dash ground nutmeg
  • dash pepper
  • 1 cup half and half
  • 1/4 cup freshly grated Parmesan cheese

Instructions

  1. Cook noodles in boiling water until al dente, then drain.
  2. Diagonally cut asparagus into 1-inch lengths.
  3. In a wide frying pan over medium heat, melt butter.
  4. Add the ham, asparagus, carrot, and zucchini. Cook, stirring occasionally, for 3 minutes without a lid.
  5. Cover the pan and cook for 1 minute longer.
  6. Add green onions, peas, basil, salt, nutmeg, pepper, and half and half to the mixture.
  7. Increase heat to high and cook until the liquid begins to boil.
  8. Mix the cooked mixture with the drained noodles.
  9. Top with freshly grated Parmesan cheese before serving.
