Ingredients
- 1/2 lb asparagus ⓘ
- 1/4 cup slivered ham or prosciutto ⓘ
- 1/4 cup butter or margarine ⓘ
- 1 thinly sliced carrot ⓘ
- 1 diced zucchini ⓘ
- 3 sliced green onions ⓘ
- 1/2 cup thawed frozen green peas ⓘ
- 1 teaspoon basil
- 1/2 teaspoon salt ⓘ
- dash ground nutmeg
- dash pepper ⓘ
- 1 cup half and half ⓘ
- 1/4 cup freshly grated Parmesan cheese ⓘ
Instructions
- Cook noodles in boiling water until al dente, then drain.
- Diagonally cut asparagus into 1-inch lengths.
- In a wide frying pan over medium heat, melt butter.
- Add the ham, asparagus, carrot, and zucchini. Cook, stirring occasionally, for 3 minutes without a lid.
- Cover the pan and cook for 1 minute longer.
- Add green onions, peas, basil, salt, nutmeg, pepper, and half and half to the mixture.
- Increase heat to high and cook until the liquid begins to boil.
- Mix the cooked mixture with the drained noodles.
- Top with freshly grated Parmesan cheese before serving.
