Ingredients

  • 1 lb. ground beef
  • 1 chopped onion
  • 1 tsp. granulated garlic or garlic powder
  • 1 (15 oz.) can tomato sauce with tomato pieces
  • 2 c. whole kernel corn, drained
  • 2 tsp. salt
  • 2 to 3 tsp. chili powder
  • 1/4 c. sliced ripe olives
  • 3/4 c. cornmeal
  • 1 c. milk
  • 2 eggs
  • 1 1/2 c. shredded Cheddar cheese

Instructions

  1. Brown the ground beef in a skillet; add chopped onion and cook until the onion is soft. Drain excess fat.
  2. Add tomato sauce, drained corn, one teaspoon of salt, granulated garlic, and chili powder to the skillet. Cover and simmer over medium-low heat for 15 minutes.
  3. Pour the beef mixture into a 9 x 13-inch baking pan.
  4. Top with sliced ripe olives.
  5. Prepare the cornmeal batter by combining cornmeal, milk, and well-beaten eggs.
  6. Pour the batter over the beef mixture in the baking pan.
  7. Sprinkle shredded Cheddar cheese evenly on top.
  8. Bake in a preheated oven at 375°F (190°C) for about 25-30 minutes until golden and bubbly.
