Three Cheese Chicken Casserole

Creamy and cheesy, this hearty chicken casserole combines tender noodles, vegetables, and three types of cheese for a comforting family-friendly meal.

Ingredients

  • 3 qt. water
  • 2 Tbsp. salt
  • 1 tsp. oil
  • 1 (5 oz.) pkg. wide noodles
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped onion
  • 3 Tbsp. melted margarine
  • 1 can cream of chicken soup (undiluted)
  • paprika
  • 1/2 c. milk
  • 1 (6 oz.) can sliced mushrooms, drained
  • 1/4 tsp. black pepper
  • 1 (12 oz.) carton cottage cheese
  • 3 c. cooked chicken
  • 1 (10 oz.) pkg. Cheddar cheese, shredded
  • 1/2 c. Parmesan cheese

Instructions

  1. Bring water, salt, and oil to a boil in a large pot.
  2. Slowly add noodles, return to a boil, and cook for 12 to 15 minutes, stirring occasionally.
  3. Drain the noodles and set aside.
  4. In a large bowl, combine the cream of chicken soup, milk, melted margarine, cottage cheese, cooked chicken, chopped green pepper, chopped onion, drained mushrooms, black pepper, and shredded Cheddar cheese.
  5. Mix well until all ingredients are evenly combined.
  6. Pour the mixture into a greased casserole dish.
  7. Sprinkle Parmesan cheese and paprika on top.
  8. Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until bubbly and golden.
  9. Serve hot and enjoy.
