- 1 1/2 lb. firm tofu, crumbled ⓘ
- 1/4 c. tomato paste ⓘ
- 2 Tbsp. soy sauce ⓘ
- 1/4 c. green olives, chopped ⓘ

Instructions
- Saute garlic with cayenne and onions in oil for 1 to 2 minutes.
- Add green pepper and continue cooking until vegetables are tender.
- When onions begin to soften, add paprika, cumin, coriander, oregano, corn, and crumbled tofu, then continue to saute.
- Preheat oven to 350°F (175°C).
- When vegetables are tender, stir in tomato paste, soy sauce, and chopped green olives. Season with salt and pepper to taste.
- Lightly oil a baking pan.
- Fill each flour tortilla with the tofu mixture, roll up, and tuck in the ends.
