Ingredients

  • 1 lb. ground turkey
  • 1 lb. tofu
  • 1 egg
  • 1 tsp. poultry seasoning
  • 1/4 to 1/2 tsp. salt
  • 1 medium onion
  • 1 small bell pepper
  • 1 large rib celery
  • 1 medium carrot
  • 4 oz. canned mushrooms
  • 2 Tbsp. margarine
  • 3/4 c. bread crumbs
  • 3 oz. Cheddar cheese

Instructions

  1. Mash together the ground turkey, tofu, and egg until well blended.
  2. Very finely mince the vegetables using a food processor if desired.
  3. Combine the minced vegetables with the seasoning and mash well.
  4. Spread the mixture in a baking pan measuring approximately 8x8 to 9x12 inches.
  5. Grate the Cheddar cheese and mix it with bread crumbs and melted margarine.
  6. Drizzle the cheese and breadcrumb mixture over the top of the loaf.
  7. Sprinkle the breadcrumb mixture evenly over the loaf; it may be quite thick.
  8. Bake at 325°F (160°C) for 1 to 1 1/2 hours or until the loaf pulls away from the sides and is golden brown on top.
  9. Let cool slightly before cutting into 8 pieces.
