Turkey Tofu Loaf

Instructions
- Mash together the ground turkey, tofu, and egg until well blended.
- Very finely mince the vegetables using a food processor if desired.
- Combine the minced vegetables with the seasoning and mash well.
- Spread the mixture in a baking pan measuring approximately 8x8 to 9x12 inches.
- Grate the Cheddar cheese and mix it with bread crumbs and melted margarine.
- Drizzle the cheese and breadcrumb mixture over the top of the loaf.
- Sprinkle the breadcrumb mixture evenly over the loaf; it may be quite thick.
- Bake at 325°F (160°C) for 1 to 1 1/2 hours or until the loaf pulls away from the sides and is golden brown on top.
- Let cool slightly before cutting into 8 pieces.
