Ingredients

  • 2 Tbsp. flour
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/4 lb. boneless veal shoulder, cut into cubes
  • 1 Tbsp. margarine
  • 1 tsp. margarine
  • 1/4 c. diced shallots or onions
  • 2 Tbsp. dry white wine
  • 2 tsp. dry white wine
  • 1 c. quartered mushrooms
  • 1/2 c. sliced carrots
  • 1/2 c. sliced celery

Instructions

  1. On a sheet of waxed paper, combine flour, salt, and pepper. Dredge veal cubes in the flour mixture.
  2. In a large pot, melt margarine over medium heat. Add the dredged veal and brown on all sides.
  3. Stir in the shallots or onions and cook until softened.
  4. Add the white wine, mushrooms, carrots, celery, parsley, boiling water, chicken broth, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for about 1.5 hours, or until the veal is tender.
