Ingredients

  • 1 lb. boneless beef chuck
  • 1 lb. beef marrow bones
  • 2 qt. cold water
  • 1 large onion
  • 1 bay leaf
  • 1 tsp. salt
  • freshly ground black pepper
  • 1 c. celery root
  • 1/2 c. carrots
  • 1/2 c. parsnips
  • 1 c. coarsely diced leeks
  • 2 1/2 c. potatoes
  • 1 recipe Tiny Dumplings
  • 1 Tbsp. finely chopped parsley

Instructions

  1. In a heavy 6-quart flame-proof casserole or soup pot, bring the beef, bones, and water to a boil over high heat, skimming off the foam and scum as they rise to the surface.
  2. Reduce the heat to the lowest point.
  3. Add the onion pierced with cloves, bay leaf, salt, and a few grindings of pepper and simmer, partially covered, for 1 1/2 hours, skimming whenever needed.
  4. Remove the onion and bay leaf from the soup.
  5. Discard the onion and bay leaf, and transfer the bones to a plate.
  6. Using a small spoon or the tip of a knife, scoop out the marrow from the bones and add it to the soup, then discard the bones.
  7. Add the celery root, carrots, parsnips, leeks, and potatoes to the soup and simmer, undisturbed, for 30 minutes or until the vegetables and meat are tender.
  8. Stir the Tiny Dumplings into the simmering soup and cook for 1 or 2 minutes longer to heat through.
  9. Add the chopped parsley, taste for seasoning, and serve either from a large heated tureen or in individual soup bowls.

Tips & Substitutions

To enhance the flavor of your soup, try adding a splash of red wine or a tablespoon of tomato paste during the simmering process. For a lighter version, substitute lean cuts of beef or use a mix of vegetables like bell peppers or zucchini instead of potatoes. Fresh herbs can also elevate the dish; consider adding thyme or rosemary for extra depth.

Serving Suggestions

Serve the Vegetable-Beef Soup with Tiny Dumplings in warm bowls, garnished with freshly chopped parsley. It pairs beautifully with crusty bread or a simple green salad for a complete meal. For a heartier option, consider serving it alongside a side of Yummy Pepper Steak With Rice to complement the rich flavors.

Storage & Reheating

Allow the soup to cool completely before transferring it to an airtight container. It can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. To reheat, gently warm on the stovetop over low heat, adding a splash of water or broth if the soup has thickened.

Frequently Asked Questions

Can I use a different type of meat for this soup?

Yes, you can substitute beef chuck with chicken or pork if you prefer. Adjust the cooking time accordingly, as chicken may require less time to become tender. For a vegetarian option, use vegetable broth and omit meat altogether while increasing the variety of vegetables.

What can I do if the soup is too salty?

If your soup turns out too salty, add diced potatoes and let them cook in the soup for about 15 minutes. Potatoes will absorb some of the saltiness. Alternatively, you can dilute the soup with additional water or low-sodium broth, adjusting the seasoning afterward.

How can I make the dumplings lighter?

To make the dumplings lighter, incorporate a little baking powder into the dough. This will help them rise during cooking. Additionally, ensure not to overwork the dough so they remain tender and fluffy when cooked in the soup.
