Ingredients

  • 8 slices bacon, diced
  • 1 lb. onion, chopped
  • 1 lb. celery, chopped
  • 1 lb. ham, diced
  • 1 1/2 gal. water
  • 1/2 cup beef base
  • 6 cups tomatoes, diced
  • 2 cups tomato paste
  • 2 1/2 cups cabbage, chopped
  • 5 medium carrots, sliced
  • 1 teaspoon pepper
  • 2 cloves garlic, pressed
  • 2 1/2 cups green beans, cut
  • 3 cups kidney beans, cut
  • 1.5 lb. colored pasta wheels
  • grated Parmesan cheese
  • raw zucchini, thinly sliced

Instructions

  1. In a large pot, cook the diced bacon until crispy; remove and set aside.
  2. Add chopped onions, celery, and diced ham to the pot; sauté until vegetables are tender.
  3. Pour in 1 1/2 gallons of water and add beef base; bring to a boil.
  4. Stir in diced tomatoes, tomato paste, chopped cabbage, sliced carrots, pepper, and pressed garlic.
  5. Add green beans and kidney beans; simmer the soup for about 60 minutes to develop flavors.
  6. Cook the colored pasta wheels separately until tender; keep them separate to prevent breaking.
  7. Add 1 1/4 cups of cooked noodles to each quart of soup as needed before serving.
  8. Garnish each bowl with thinly sliced zucchini and sprinkle with grated Parmesan cheese.
