Ingredients

  • 15 1/4 oz. can white corn, drained
  • 14 1/2 oz. can French style green beans, drained
  • 3/4 cup celery, chopped
  • 3/4 red bell pepper, chopped
  • 2 bunches green onions, chopped
  • 3 oz. apple cider vinegar
  • 1/4 cup oil
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Drain the canned white corn and French style green beans and set aside.
  2. Chop the celery, red bell pepper, and green onions.
  3. In a large mixing bowl, combine the drained corn, green beans, chopped celery, bell pepper, and green onions.
  4. In a saucepan, blend the apple cider vinegar, oil, sugar, salt, and pepper.
  5. Bring the mixture to a boil, then remove from heat and let cool.
  6. Pour the cooled vinaigrette over the salad ingredients and toss to combine.
  7. Refrigerate before serving to allow flavors to meld.
