Ingredients

  • 2 Tbsp. butter
  • 1 Tbsp. oil
  • 1 c. chopped onion
  • 1 garlic clove
  • 1/2 lb. cooked chicken
  • 1/2 lb. cooked hot sausage
  • 1 c. cooked and drained spinach
  • 1/2 c. chicken broth
  • 1/2 tsp. salt
  • 1/4 tsp. nutmeg
  • 2 c. uncooked, sliced mushrooms
  • dash of pepper
  • 1/2 lb. lasagna noodles
  • 1/2 c. butter
  • 1/2 c. flour
  • 2 1/2 c. light cream
  • 1/2 c. heavy cream
  • oregano
  • salt and pepper
  • 2 Tbsp. heavy cream

Instructions

  1. Melt 2 tablespoons of butter in 1 tablespoon of oil in a large frypan.
  2. Add 1 cup chopped onion and 1 garlic clove; sauté until tender.
  3. Add cooked chicken, cooked hot sausage, cooked and drained spinach, sliced mushrooms, salt, nutmeg, and pepper to the frypan; cook until heated through.
  4. In a separate saucepan, melt 1/2 cup butter and stir in 1/2 cup flour to make a roux.
  5. Gradually whisk in 2 1/2 cups light cream and 1/2 cup heavy cream, cooking until the sauce thickens.
  6. Season the sauce with oregano, salt, and pepper to taste.
  7. Cook lasagna noodles according to package instructions; drain.
  8. Layer cooked noodles in a baking dish, alternating with the meat and vegetable mixture and white sauce.
  9. Repeat layers as needed, finishing with a layer of sauce on top.
  10. Bake in a preheated oven at 375°F (190°C) for about 30 minutes or until bubbly and golden.
  11. Let stand for a few minutes before serving.
