White Sauce Lasagna

Ingredients
- 2 Tbsp. butter ⓘ
- 1 Tbsp. oil ⓘ
- 1 c. chopped onion ⓘ
- 1 garlic clove ⓘ
- 1/2 lb. cooked chicken ⓘ
- 1/2 lb. cooked hot sausage ⓘ
- 1 c. cooked and drained spinach ⓘ
- 1/2 c. chicken broth ⓘ
- 1/2 tsp. salt
- 1/4 tsp. nutmeg ⓘ
- 2 c. uncooked, sliced mushrooms ⓘ
- dash of pepper ⓘ
- 1/2 lb. lasagna noodles ⓘ
- 1/2 c. butter ⓘ
- 1/2 c. flour ⓘ
- 2 1/2 c. light cream ⓘ
- 1/2 c. heavy cream ⓘ
- oregano ⓘ
- salt and pepper ⓘ
- 2 Tbsp. heavy cream ⓘ
Instructions
- Melt 2 tablespoons of butter in 1 tablespoon of oil in a large frypan.
- Add 1 cup chopped onion and 1 garlic clove; sauté until tender.
- Add cooked chicken, cooked hot sausage, cooked and drained spinach, sliced mushrooms, salt, nutmeg, and pepper to the frypan; cook until heated through.
- In a separate saucepan, melt 1/2 cup butter and stir in 1/2 cup flour to make a roux.
- Gradually whisk in 2 1/2 cups light cream and 1/2 cup heavy cream, cooking until the sauce thickens.
- Season the sauce with oregano, salt, and pepper to taste.
- Cook lasagna noodles according to package instructions; drain.
- Layer cooked noodles in a baking dish, alternating with the meat and vegetable mixture and white sauce.
- Repeat layers as needed, finishing with a layer of sauce on top.
- Bake in a preheated oven at 375°F (190°C) for about 30 minutes or until bubbly and golden.
- Let stand for a few minutes before serving.
