Ingredients

  • 1/3 c. uncooked wild rice
  • 4 c. chicken broth
  • 1/2 c. diced celery
  • 1/2 c. chopped green pepper
  • 1/3 c. butter
  • 1/2 c. flour
  • 1/2 tsp. salt
  • 1/4 tsp. curry
  • 1 Tbsp. pimento
  • 3/4 c. half and half
  • 1/4 c. diced onion
  • 1 small carrot
  • 1 clove garlic, minced
  • 1/4 c. sliced mushrooms

Instructions

  1. Rinse rice with cold water; drain.
  2. Cook rice in chicken broth until tender.
  3. Saute celery, green pepper, onion, mushrooms, carrot, and garlic in butter until tender.
  4. Add flour and cook for 1 to 2 minutes, stirring constantly.
  5. Add broth, rice, salt, pepper, curry, and pimento.
