  • 1/2 gal. green tomatoes

  • 1 qt. green peppers
  • 1/2 gal. vinegar
  • 2 lb. brown sugar
  • 4 Tbsp. mustard
  • 2 tsp. mustard seed
  • 2 tsp. ginger
  • 2 tsp. cinnamon

Instructions

  1. Chop the cabbage, green tomatoes, onions, and green peppers and salt them overnight.
  2. Cover the vegetables with water and add 1 cup of salt.
  3. Drain the vegetables the next morning and pour boiling water over them to cover.
  4. Drain the vegetables well.
  5. Mix vinegar, brown sugar, mustard, mustard seed, ginger, cinnamon, and turmeric. Mix well.
  6. Add the vegetables to the mixture.
  7. Bring to a boil and cook until thickened, about 45 to 50 minutes.
  8. Seal in jars.
