Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 2 cups zucchini
  • 1 cup walnuts
  • 1 cup bananas
  • 8 1/4 ounces crushed and drained pineapple
  • 3 cups flour
  • 1/2 teaspoon baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 teaspoons nutmeg

Instructions

  1. Mix eggs, then add oil, sugar, and vanilla. Continue beating until thick and foamy.
  2. With a spoon, stir in zucchini, bananas, and pineapple.
  3. Combine flour, baking powder, soda, cinnamon, and nutmeg.
  4. Stir the dry ingredients into the wet mixture and mix well; add walnuts.
  5. Divide the batter evenly between two greased, floured loaf pans.
  6. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted into the center comes out clean.
