All Star Chili

Ingredients
- 1 1/2 lb beef sirloin ⓘ
- 2 lb ground round ⓘ
- 1 lb chicken ⓘ
- 1/2 lb pork chops ⓘ
- 6 T olive oil ⓘ
- 4 hot sausage links ⓘ
- 2 c diced onion ⓘ
- 1/2 c diced cilantro ⓘ
- 1 c diced celery ⓘ
- 4 T minced garlic ⓘ
- 2 c fresh mushrooms
- 1 (4.5 oz) can green chili peppers ⓘ
- 4 hot Jalapeno peppers ⓘ
- 1 (16 oz) can kidney beans ⓘ
- 1 (16 oz) can navy beans ⓘ
- 1 (16 oz) can pinto beans ⓘ
- 2 (16 oz) cans diced tomatoes ⓘ
- 1 (8 oz) can tomato sauce ⓘ
- 1 small can tomato paste ⓘ
- 2 t dried crushed basil ⓘ
- 3 t chili powder ⓘ
- 1 t cinnamon ⓘ
- 1 T ground cumin ⓘ
- 2 t dried oregano ⓘ
- 1 t paprika ⓘ
- 1 t black pepper ⓘ
- 1 t red pepper ⓘ
- 1 t white pepper ⓘ
- Cayenne pepper to taste ⓘ
- 1 t sea salt ⓘ
- 1 can beef broth ⓘ
- 1 can chicken broth ⓘ
- 2 c red wine ⓘ
- 2 T Worcestershire sauce ⓘ
- 1 c peanut butter ⓘ
- 2 T brown sugar ⓘ
- 1 pkg shredded Cheddar cheese ⓘ
- 2 c sour cream ⓘ
Instructions
- Brown beef, chicken, and pork chops in oil in a wok or large skillet and set aside.
- Grill sausage links on barbecue; cut into bite-size pieces and set aside.
- Combine browned meats and sausage in a very large pot.
- Lightly brown onion in olive oil in the wok.
- Add onion, cilantro, and remaining vegetables to the meats in the large pot.
- Add canned beans, diced tomatoes, tomato sauce, tomato paste, and spices to the pot.
- Add liquid ingredients, peanut butter, and brown sugar to the pot and stir well.
- Bring to a boil over medium heat, stirring frequently.
- Reduce heat and simmer for 12 hours on low heat, stirring occasionally.
- Turn off heat; let cool and remove excess grease from the top.
- Reheat before serving. Serve with shredded Cheddar cheese, sour cream, and diced Vidalia onions. Accompany with garlic or hard bread and Merlot wine.
