Ingredients

  • YEAST DOUGH 1 cup cake flour
  • 2 1/2 cups flour
  • 1/2 cup + 2 tbs warm milk
  • 1/3 cup sugar + 2 tsp
  • 1 pkg dry yeast
  • 1 large egg
  • 1 egg yolk
  • 1/4 cup sour cream
  • 5 tbs butter (room temp)
  • 1 tsp vanilla
  • 1/2 tsp lemon extract (or grated lemon rind)
  • Chocolate and raisin filling:
  • 1 large egg
  • 1 tbs light cream (half and half )
  • 6 tbs chocolate syrup
  • 1/2 cup raisins
  • 2/3 cup chocolate cake or cookie crumbs
  • 1 tsp cinnamon
  • 2/3 cup chocolate chips
  • Streusel topping:
  • 1/2 cup flour
  • 6 tbs light brown sugar
  • 1 tsp cinnamon

Instructions

  1. DOUGH
  2. 1 Whisk flours together (set aside)
  3. Combine 2 tsp sugar yeast and warm milk and let
  4. stand until foamy (5 Minutes)
  5. 2 Combine 1/2 cup flour mixture to yeast and beat
  6. until well combined.
  7. 3 Add 1/3 cup sugar, eggs,sour cream butter,
  8. salt, vanilla and lemon until combined add
  9. the remaining flour in batches and beat well
  10. 4 add more flour if necessary to make a soft but not
  11. sticky dough
  12. 5 Knead the dough about 4 minutes and place in
  13. an oiled bowl to rise (double in size about 1 hour)
  14. FILLING:
  15. 1 Butter 12 muffin cups. Punch down the dough and
  16. divide in half. On a lightly floured surface role one
  17. piece into a 12 by 8 inch rectangle
  18. 2 Beat an egg with the light cream and brush the
  19. surface with the mixture. Sprinkle half of the
  20. remaining filling ingredients in the order given
  21. over the surface leaving 1/2 margin along the sides
  22. 3 Roll the dough from the long side (jelly roll) and
  23. pinch to seal well.
  24. 4 Cut crosswish into 6 (2 inch thick) slices and press
  25. into the muffin cups
  26. 5 Cover with plastic wrap to rise (30 Minutes) and
  27. preheat oven to 375 with rack in the center
  28. TOPPING:
  29. 1 combine the flour,sugar, cinnamon and cut in the
  30. cold butter until crumbly
  31. 2.Brush the muffins with some of the leftover egg
  32. and cream mixture and press the topping on top
  33. to adhere
  34. 3 Bake for about 20 - 22 minutes until slightly brown
  35. and firm to the touch cool on a rack
  36. 4 drizzle the top of each muffin with about 1 tsp
  37. of chocolate syrup and sprinkle with powered
  38. sugar
