Ingredients
- 2 lb. lean stew beef, cut in cubes ⓘ
- 2 Tbsp. flour ⓘ
- 2 Tbsp. butter ⓘ
- 1 tsp. olive oil ⓘ
- 1 tsp. salt ⓘ
- 1/4 tsp. pepper ⓘ
- 2 c. beef consomme ⓘ
- 1 c. Burgundy wine ⓘ
- 1 med. onion, chopped ⓘ
- 1 carrot, sliced ⓘ
- 1 clove garlic, minced ⓘ
- 1 bay leaf ⓘ
- 1/4 tsp. thyme ⓘ
- 1 jar small whole onions ⓘ
- 1 can sliced mushrooms ⓘ
- 1 Tbsp. snipped parsley ⓘ
Instructions
- Toss the meat in flour, salt, and pepper, then brown in butter and oil.
- Add beef consomme, Burgundy wine, chopped onion, sliced carrot, minced garlic, bay leaf, and thyme.
- Simmer for 2 1/2 to 3 hours until the meat is tender.
- Add parsley, small whole onions, and sliced mushrooms just before serving, then simmer until hot.
