Instructions

  1. Dip each chicken cutlet in beaten egg, then coat with seasoned bread crumbs, shaking off excess.
  2. Saute the breaded cutlets in olive oil over medium heat for about 2 to 3 minutes on each side until browned.
  3. Transfer the cooked cutlets to an ovenproof baking dish.
  4. Place one slice of Muenster cheese on top of each cutlet and set aside.
  5. In the same skillet, melt butter or margarine and saute minced garlic, sliced scallions, minced parsley, and minced basil for about 2 minutes.
  6. Add sliced mushrooms and continue to saute for 2 more minutes.

  8. Add white wine and cook for an additional 3 minutes.
  9. Season with salt and pepper to taste.
