Ingredients
- 1 beaten egg ⓘ
- 1/2 cup tomato juice ⓘ
- 1 1/2 cups soft bread crumbs ⓘ
- 1/2 teaspoon salt
- dash of pepper ⓘ
- 1 pound ground beef (or pork, lamb, veal, turkey, or ground ham) ⓘ
- 1 (10 oz.) package frozen broccoli or mixed vegetables ⓘ
- 1 1/4 cups boiling water ⓘ
- 1 cup quick cooking rice ⓘ
- 1 1/2 teaspoons minced dry onion (or 1 small fresh chopped onion) ⓘ
- 1/2 teaspoon salt ⓘ
- 1 cup milk ⓘ
- 1 cup shredded American cheese or Cheddar ⓘ
Instructions
- In a mixing bowl, combine the beaten egg, tomato juice, bread crumbs, 1/2 teaspoon salt, and pepper.
- Add the ground meat and mix well.
- Pat the meat mixture evenly in an 8 x 8-inch ungreased pan.
- Bake in a preheated oven at 350°F for 20 minutes; spoon off any excess juices.
