Ingredients

  • 1 beaten egg
  • 1/2 cup tomato juice
  • 1 1/2 cups soft bread crumbs
  • 1/2 teaspoon salt
  • dash of pepper
  • 1 pound ground beef (or pork, lamb, veal, turkey, or ground ham)
  • 1 (10 oz.) package frozen broccoli or mixed vegetables
  • 1 1/4 cups boiling water
  • 1 cup quick cooking rice
  • 1 1/2 teaspoons minced dry onion (or 1 small fresh chopped onion)
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 cup shredded American cheese or Cheddar

Instructions

  1. In a mixing bowl, combine the beaten egg, tomato juice, bread crumbs, 1/2 teaspoon salt, and pepper.
  2. Add the ground meat and mix well.
  3. Pat the meat mixture evenly in an 8 x 8-inch ungreased pan.
  4. Bake in a preheated oven at 350°F for 20 minutes; spoon off any excess juices.
