Dinner In A Pumpkin

- Cut off the top of the pumpkin and thoroughly clean out seeds and pulp.
- Preheat oven to 350°F.
- In a large skillet, sauté onions in oil until tender.
- Add sausage and brown.
- Add soy sauce, brown sugar, mushrooms, and cream of chicken soup. Simmer for ten minutes, stirring occasionally.
- Add cooked rice and sliced water chestnuts.
- Spoon mixture into the cleaned pumpkin shell.
- Replace the pumpkin lid and place the entire pumpkin on a baking sheet.
- Bake for 1 hour, or up to 2 hours depending on pumpkin size.
- Remove from oven, place on a serving plate, remove pumpkin lid, and serve the mixture.
