A hearty baked pumpkin filled with savory sausage, rice, mushrooms, and water chestnuts, infused with sweet and savory flavors—perfect for comforting family dinners or festive occasions.

Ingredients

  • 1 small to medium pumpkin
  • 1 onion, chopped
  • 2 Tbsp. oil
  • 1 1/2 to 2 lb. sausage
  • 1 Tbsp. soy sauce
  • 2 Tbsp. brown sugar
  • 1 (4 oz.) can sliced mushrooms
  • 1 can cream of chicken soup
  • 1 1/2 c. cooked rice
  • 1 (8 oz.) can sliced water chestnuts

Instructions

  1. Cut off the top of the pumpkin and thoroughly clean out seeds and pulp.
  2. Preheat oven to 350°F.
  3. In a large skillet, sauté onions in oil until tender.
  4. Add sausage and brown.
  5. Add soy sauce, brown sugar, mushrooms, and cream of chicken soup. Simmer for ten minutes, stirring occasionally.
  6. Add cooked rice and sliced water chestnuts.
  7. Spoon mixture into the cleaned pumpkin shell.
  8. Replace the pumpkin lid and place the entire pumpkin on a baking sheet.
  9. Bake for 1 hour, or up to 2 hours depending on pumpkin size.
  10. Remove from oven, place on a serving plate, remove pumpkin lid, and serve the mixture.
