Ingredients

  • 2 1/4 lb. flank steak
  • 1 small onion, diced
  • 2 oz. mushrooms, sliced
  • 1 1/2 cups breadcrumbs
  • 1/2 cup chicken broth or white wine
  • 1/4 cup chopped cashews
  • Whole cashews (for topping or garnish, optional)
  • 3 Tbsp. butter
  • 1 clove garlic, minced
  • 10 oz. spinach, chopped
  • 1 tsp. basil
  • 1 1/2 cups grated sharp Cheddar cheese

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Pound the flank steak on both sides with a mallet to tenderize.
  3. In a skillet, melt 3 tablespoons of butter over medium heat.
  4. Add the diced onion and sliced mushrooms; cook until softened.
  5. Add minced garlic and cook for 1 minute.
  6. Stir in chopped spinach and basil; cook until wilted.
  7. Pour in chicken broth or white wine; simmer until liquid reduces slightly.
  8. Stir in breadcrumbs and chopped cashews; mix well.
  9. Spread the spinach mixture evenly over the pounded steak.
  10. Sprinkle grated sharp Cheddar cheese over the top.
  11. Roll up the steak tightly, securing with kitchen twine if necessary.
  12. Place the rolled steak in a baking dish and bake for about 30 minutes until cooked through.
  13. Remove from oven, let rest for a few minutes, then slice and serve.
