Honan Beef is a flavorful Chinese stir-fry featuring tender beef and crisp vegetables, infused with soy, ginger, and garlic, perfect for a quick and satisfying meal.

Ingredients

  • 1 lb. lean beef round
  • 1/4 c. soy sauce
  • 2 Tbsp. sherry
  • 1 clove garlic, chopped
  • 3 Tbsp. oil
  • 1 bunch scallions, cut into 1-inch lengths
  • 1 c. carrots, thinly sliced
  • 2 c. celery, thinly sliced
  • 1/2 tsp. ground ginger
  • 1 tsp. hot pepper flakes
  • 1 (6 oz.) can button mushrooms, drained
  • 1 tsp. salt
  • 1/4 c. toasted whole blanched almonds

Instructions

  1. Slice beef paper thin into long strips.
  2. In a bowl, mix beef, soy sauce, sherry, and garlic; let stand at room temperature for 1 hour.
  3. In a large skillet, heat oil until it sizzles.
  4. Remove beef from bowl and stir-fry in skillet for 2 to 3 minutes or until browned.
  5. Add marinade from beef and remaining ingredients, including pepper flakes to taste.
  6. Stir-fry over high heat for 4 to 5 minutes or until vegetables are tender but still crisp.
  7. Serve over hot rice.
