Ingredients

  • 2 to 2 1/2 lb. beef, cut into cubes
  • 1 clove garlic, minced
  • 1 small onion, chopped
  • 1/4 cup chopped celery
  • 1/4 cup chopped carrots
  • 2 to 3 cups beef stock
  • 1 teaspoon dried oregano
  • 1 teaspoon cumin
  • 2 bay leaves
  • 1/3 cup tomato paste
  • 2 red peppers
  • salt to taste
  • 3 tablespoons oil
  • 2 tablespoons flour
  • 2 tablespoons chili powder

Instructions

  1. Brown beef in a large skillet with oil.
  2. Remove the beef and set aside.
  3. Lightly brown onion, celery, carrots, and garlic in the same skillet.
  4. Add dried oregano, cumin, crushed bay leaves, flour, tomato paste, and chili powder.
  5. Cook for about 2 minutes, stirring frequently.
  6. Return the browned beef to the skillet and add beef stock.
  7. Bring to a boil.
  8. Reduce heat to a simmer and add red peppers and salt to taste.
  9. Cook until beef is tender and flavors meld.
