Individual Pastitsio
Ingredients
- 1 large eggplant, thinly sliced ⓘ
- 1 tbsp olive oil ⓘ
- 1 None onion, chopped ⓘ
- 1 lb ground beef ⓘ
- 1 can (15 oz) diced tomatoes ⓘ
- 1 tbsp tomato paste ⓘ
- 1 tbsp chopped parsley ⓘ
- 1 tsp ground cinnamon ⓘ
- 3 cups cooked macaroni ⓘ
- 1/2 cup grated Cheddar cheese ⓘ
- 1/2 cup grated Parmesan cheese ⓘ
- None None FOR THE WHITE SAUCE ⓘ
- 6 tbsp butter ⓘ
- 1/3 cup flour ⓘ
- 2 cups milk ⓘ
Instructions
- Grease six 1-cup ramekins; place on a baking pan. Sprinkle eggplant with salt; let stand 15 mins. Rinse well and pat dry.
- Preheat broiler to high. Brush eggplant with oil; place on baking pan. Broil 4-5 mins, turning once.
- Preheat the oven to 350°F. Heat oil in a medium saucepan on high heat. Saute onion 3-4 mins, until tender. Add ground beef; cook 4-5 mins, breaking up lumps with a spoon. Stir in tomatoes, tomato paste, parsley and cinnamon; simmer 4-5 mins, until thickened slightly. Season to taste.
- Meanwhile, for the white sauce, melt butter in a medium saucepan on high heat. Add flour; cook, stirring, 1 min. Remove from heat. Blend in milk until smooth. Return to heat. Cook, stirring constantly, until sauce boils and thickens. Reduce heat to low; simmer 3 mins. Season to taste.
- Place 1/2 the eggplant in prepared dishes. Top with macaroni, ground beef mixture and remaining eggplant. Cover with sauce; sprinkle with combined cheeses.
- Bake 15-20 mins, until golden.
