  • 1/2 head red leaf lettuce
  • 2 1/4 oz. can sliced black olives, drained

  • 1 container cherry grape tomatoes
  • 1 small yellow bell pepper, chopped large
  • 4 oz. fresh mushrooms, sliced
  • 1/2 bunch green onions, cleaned and diced
  • 1 small can Parmesan cheese
  • 8 oz. bottle Italian dressing

Instructions

  1. Wash and tear lettuce into bite-size pieces and drain well in a colander.
  2. Place the lettuce in a large salad bowl.
  3. Score cucumbers with the tines of a fork, then slice into rounds.
  4. Add sliced olives, cucumber rounds, cherry grape tomatoes, chopped yellow bell pepper, sliced mushrooms, and diced green onions to the lettuce.
  5. Add Parmesan cheese and toss gently to combine.
  6. Pour half of the Italian dressing over the salad and toss again.
  7. Add more dressing if desired and toss.
  8. Serve topped with freshly ground pepper and croutons if desired.
