Ingredients

  • 1 large can whole corn
  • 2 cups cornmeal (self-rising)
  • 1 1/4 cups buttermilk
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 cup bell pepper, chopped
  • 1 large onion, chopped
  • 1/2 cup green onion, chopped
  • 2 to 3 hot peppers, chopped
  • 1 1/2 cups grated cheese
  • 2 eggs
  • 1/2 cup oil
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup celery, chopped

Instructions

  1. Beat the eggs in a large mixing bowl.
  2. Add the whole corn, cornmeal, oil, soda, salt, and buttermilk to the eggs and mix well.
  3. Fold in chopped onion, bell pepper, celery, black pepper, chili powder, and hot peppers.
  4. Pour the batter into a greased 9-inch pan.
  5. Bake at 400°F (200°C) for 30 to 40 minutes until golden and cooked through.
