Ingredients

  • 1 large head lettuce
  • 2 medium carrots
  • 2 to 3 hard-boiled eggs, chopped
  • 6 strips cooked crispy bacon, crumbled
  • 1 1/4 to 1 1/2 cups Cheddar cheese, shredded
  • 1/2 cup tiny shell macaroni, cooked
  • 1/4 to 1/2 cup raw chopped cauliflower
  • 1/4 to 1/2 cup raw chopped broccoli
  • 1/4 cup green bell pepper, chopped
  • 1 celery stalk, chopped
  • 1/4 cup ripe olives, chopped
  • 3 to 4 green onions, chopped
  • 1/4 cup sliced radishes
  • 1/4 to 1/2 cup mushroom slices
  • sugar, to taste
  • mayonnaise, to taste
  • croutons (preferred flavor)
  • Parmesan cheese, grated

Instructions

  1. Shred lettuce and carrots using a food processor, grater, or chopper, then place in a large serving bowl.
  2. Add chopped hard-boiled eggs, crumbled bacon, shredded cheddar cheese, cooked macaroni, chopped cauliflower, chopped broccoli, chopped green bell pepper, chopped celery, chopped olives, chopped green onions, sliced radishes, and sliced mushrooms to the bowl.
  3. Sprinkle sugar to taste and add mayonnaise as desired.
  4. Toss the salad ingredients well to combine.
  5. Top with croutons and grated Parmesan cheese.
  6. Keep the salad cold until serving.
