Kit Carson Soup
A hearty, flavorful soup combining tender turkey, vegetables, chickpeas, and spices, perfect for comforting meals and suitable for family gatherings or casual dinners.
Ingredients
- 3 lb. broiler-fryer or 2 turkey drumsticks ⓘ
- 1 onion, quartered ⓘ
- 1 stalk celery, cut up ⓘ
- 1 bay leaf
- 2 tsp. salt
- 6 whole black peppercorns
- 1/2 tsp. Mexican seasoning ⓘ
- 1/2 tsp. dried oregano ⓘ
- 2 yellow crookneck squash, sliced ⓘ
- 1 cup canned chickpeas (garbanzos) ⓘ
- 1/4 cup chopped cilantro ⓘ
- 3 tbsp. salted sunflower or pumpkin seeds ⓘ
- 1 avocado, peeled and sliced ⓘ
- 3 lb. broiled or boiled fillet ⓘ
- 1 cup finely chopped bell pepper, white onions, and celery ⓘ
- 6 cups tomato sauce ⓘ
- 1 gallon water ⓘ
- 2 tbsp. finely chopped parsley ⓘ
- 1/2 cup green onion tops ⓘ
- 1 tbsp. Worcestershire sauce ⓘ
- 2 tsp. salt ⓘ
- 2 1/2 tsp. red pepper ⓘ
- 2 1/2 tsp. black pepper ⓘ
- 2 tsp. garlic salt ⓘ
Instructions
- Make a roux by cooking flour and grease in a large pot until the mixture darkens to the color of peanut butter.
- Add ingredients to the roux and allow to simmer for 25 minutes.
- Add cooked fish or turkey fillet to the pot.
- Cover with a lid and simmer for another 30 minutes, stirring carefully from side to side occasionally to prevent sticking or burning.
